Tasty Thursday – Chicken & Sweet Onion Crockpot Dinner

In an effort to better organize my life blog, I thought it would be fun to have some “special” weekly segments… be on the lookout for Top Ten Tuesday to join Mamavation Monday and Wordless Wednesday as well as the return of Fantastic Find Friday.  But today is Thursday and what better segment than Tasty Thursday! (I’ll be working up a fancy schmancy graphic to go along with this but for now, you’ll just have to deal)

A little about Tasty Thursday – as if you cared.  I love to cook.  REALLY LOVE to cook.  There are those people who can be creative and imaginative in the kitchen and can whip up beautiful recipes with whatever happens to land in their pantries.  That’s not quite me… I thrive on direction… or at least a guided.  That’s not to say that we haven’t had “Surprise” dinners in my house where I combine random stuff in the pantry, freezer and fridge, but I’m not structured enough to build a recipe from that… or (much to my husband’s chagrin) ever re-create the fabulous creations a second time.

Most of the time, I scour the inter-webs to find a tasty creation that will satisfy a picky eater and still match up with my goals to eat healthy, real foods.  This spot on my blog will be an opportunity to share these gems with you and feature some of my favorite internet Foodies.

Today I’m sharing a recipe I made last night and OMG it’s a WINNER!  Added bonus?  It’s from my FAVORITE Healthy Foodie – Alysa over at Inspiredrd.com or @inspiredrd on twitter.  Added ADDED bonus?  If you check out her original post HERE, you get to see pictures of her ADORABLE kiddos.

Here’s what I liked about the recipe –

  1. set it up in the morning, go about your day (i.e. go to work) and come home to dinner
  2. This recipe is VERY forgiving – leave it in the crock pot for like 9 hours… the last 30 minute on high by accident? No Problem!
  3. I think the onions were my FAV part of this recipe.  they came out delicious.
  4. When I got home last night, the whole house smelled yum-tastic … that’s my favorite thing about crock pot cooking.
  5. Even the picky eater in the house liked it, although he has a thing about “sweet” and “meat” mixing… so that was a slight issue but he still ate it and commented “Not Bad” which is a compliment sometimes.
  6. Feeling creative?  I’d bet you can alter the ingredients to suit your specific taste needs giving you endless opportunities to re-create this meal based on your families preferences
What I’d do differently
  1. Honestly, the only thing I’d do different would be to make this on a non-work day so I could add extra veg part way through the cooking process… mushrooms would be GREAT in this, but not after 9 hours in the crock pot… (yes, I had a long day yesterday)

Chicken & Sweet Onion Crockpot Dinner

This recipe is AMAZING and quick and easy since you set up your crock pot in the morning and then go about your day
Ingredients
  • 6 chicken thighs (can be frozen)
  • 1½ Tbsp. lower-sodium soy sauce (I used gluten-free)
  • 1½ Tbsp. turbinado sugar (can use any kind of sugar)
  • tsp. black pepper
  • 4 cloves garlic, chopped
  • 1 Tbsp. olive oil
  • tsp. red pepper flakes
  • 2 yellow onions, peeled and thickly sliced
Instructions
  1. Place the chicken in the bottom of the crockpot.
  2. Mix soy sauce, sugar, pepper, garlic, red pepper flakes and olive oil in a small bowl.
  3. Pour over chicken.
  4. Place onion slices on top of chicken.
  5. Cover with lid and cook on high for 2 hours then on low for 3-4 hours or until ready to serve. (Cooking times will vary depending on crockpot and whether chicken is fresh or frozen.)
  6. Serve chicken over rice and garnish with fresh parsley.
