Ok, so first of all, I have to share how excited I am that Alysa is our guest on Mamavation TV tonight… you know her as InspiredRD on twitter and she is AMAZING. Seriously
Plus, it’s a bit ironic that she’s the guest because this weekend I realized just how much I need to get back in the habit of planning my meals… NO REALLY… I’ve been good about sticking with my exercise (ok, so still a bit of improvement needed but it’s a process) but meals lately leave a lot to be desired… Mostly becuase there are now a lot more nights where I’m cooking for 1… which is both depressing and fun at the same time… I mean, I can make whatever I want, I don’t have to worry about likes and dislikes, I can cook in smaller portions, etc… but at the same time, most recipes are for 6-8 servings and cooking for one can be a bit depressing. HOWEVER, I have some new recipes I’m actually excited to try and instead of looking at the lonely aspect, I’m taking this opportunity to cook new and exciting foods a few times a week and enjoying the leftovers on the other days. (fortunately for me, when the kids are here, they will eat ANYTHING… and I do mean anything)
Also, saw a brilliant tip to take freezable foods and package up individual servings for the freezer for those busy nights – it’s like a TV dinner only healthy!
So, I’m going to share this week’s plan with ya.. Really, I’m only cooking 4 nights and enjoying leftovers the others. (plus the halloween party on Saturday which is a Murder Mystery Dinner)
Monday – Tomato-&-Olive-Stuffed Portobello Caps
Tuesday – Salad – Grilled chicken, tomatoes, spinach, mozzarella, fresh basil, balsamic
Wednesday – Toasted Quinoa Salad with Scallops & Snow Peas
Thursday – Irish Lamb Stew
Friday – Scallop/quinoa salad leftovers
Saturday – Halloween Party
Sunday – Irish Lamb Stew Leftovers
So there’s my meal plan. Â Thursday we are supposed to have a cold front blow in and it’s ALWAYS a busy night with the kids (plus there is the Together Counts Twitter Party that night) so I wanted something I could throw in the crock pot.

Ok, back to the matter at hand… this week’s question has be a bit stumped… Shocking I know… the question:
How would you brand your health and wellness lifestyle? How do you want others to know you in this area?
I guess I would “brand” my lifestyle the same as I branded this blog… Slightly Off Kilter. Â Far from perfect, a little on the wonky side. Â but still moving forward each and every day and taking you along for the ride. Â The only way I want to be “known” by others in this area is as someone who is real and honest. Â Truth is, I write this blog for me. Â I write this as an outlet to express my current feelings and a way to look back to see how far I’ve come. Â If others take something away from this GREAT! but it’s for me more than anything else.
and that said, I need to get back to work 😉

We, my wife and I haven’t done any weekly meal planning. We just go by what we want to eat! Guess it’s time we try planning to save us the trouble of trying to find the ingredient at the last minute!

Irish lamb stew? Yummy! I need to snag this recipe and add it to next week’s meal plan. It looks like a good one for a busy night. Your meal plan looks fantastic and I can’t wait to hear how it all tasted. I struggle with the whole cooking for one thing sometimes but we’re a very important one and we need to remember that.

I am drooling over the stuffed mushrooms! Yummy!! Meal planning is a habit that I need to get back into as well. Not planning makes it too easy to say let’s just eat out tonight. Subway really loves me right now 😉
