On weekends, I always make a big breakfast when the boys are around. Mostly because they are boys and eat a lot. No joke – between my folks and the boys, we can go through 2 dozen eggs in one sitting.
Good thing we have chickens out back. For today’s Come Play in May Challenge, I thought I’d share our favorite weekend breakfast – Buttermilk Pancakes. I know I know… It’s National Star Wars Day and I should totally be more creative but I’m not gonna. If you really want to, bust our some Star Wars Pancake Molds and make these more festive.
I’ve tried a number of different recipes – including the one on the Bisquick Box and this combo seems to be the one that my family loves. It produces a flavorful, fluffy, pancake that is better than even our favorite pancake house’s offering.
2 1/4 cup buttermilk
2 large egg
1/2 teaspoon baking soda
2 cup all-purpose flour
2 tablespoon sugar
2 teaspoon double-acting baking powder
2 teaspoon salt
1 Tablespoon Bacon grease or melted butter
Preheat griddle to 350°F
Pour buttermilk into a Pyrex measuring cup and add baking soda. Stir with fork and let sit until bubbles form.
Add flour, sugar, baking powder and salt to a separate bowl and whisk to blend.
Add egg to buttermilk mixture and mix. Pour liquid into flour and stir gently with a fork. Add in bacon grease or melted butter and mix.
You want to blend the wet and dry ingredients; you aren’t looking for a completely smooth batter–just a well-blended one.
With a small ladle, pour batter onto pre-heated griddle. If you are adding blueberries or nuts, now is the time.
Watch your pancakes and when the top starts to bubble, flip. The pancakes will rise up
Your pancakes are done when the sides are dry and the bottom is golden.
Serve hot off the griddle topped with butter and syrup or other topping of your choice.
And a side of bacon of course… because everything is better with bacon

Mmm pancakes. I end up making pancakes pretty much every Sunday. Plain with sprinkles for Phee, and usually berry pancakes for me & Doug. Syrup for them, none for me. I think I could make them in my sleep.
