Bacon Egg & Cheese Avocados

This morning, like most mornings, I shared my breakfast on the IG. 

Which also shares to the book of face of course. And I was met with requests for the recipe. 

The thing is… It’s not much of a recipe. 

  • Half an avocado- scoop a bit to make more room for egg. 
  • Crack an egg in each half. 
  • Sprinkle cooked bacon and cheese on top. 
  • Bake at 425 for 14-15 minutes or until the egg is cooked. 

It’s really that simple. 

Btw- I used a muffin tin to hold the avocado halves. Keeps them balanced.

  1. This looks so good. I never used to like avocados or guacamole but it seems my palate has changed over the years and now I crave them. I need to find more ways to use avocados and maybe get the rest of my family on board as well. 🙂
